Are you talking about recording the screen of a computer or a TV console?
IF your talking about computers then they just use simple software.
IF your talking about a TV, just use a DVD recorder.

    Some software:
    Google Search
    Camtasia
    Hypercam
    Demorecorder (Linux)

I think they use the game to make the video. If you want to record the screen you need some screen capture software. To record voice you need something like Audacity and a microphone.

Educated questions often get educated answers, and simple questions often get simple answers.

Aye, Audacity is the best for sound recording. I think quite a lot of screen recorders also record sound as well though. (Maybe not as good quality)
